Preheat oven to 325°F.

In a large bowl, cream butter and beat together with brown sugar, molasses, and egg at medium speed until well combined.

Stir in remaining ingredients except granulated sugar with spatula or large wooden spoon until just combined.

Shape dough into 1-inch balls, and roll balls in granulated sugar to cover.

Place balls on ungreased cookie sheet approximately 2 inches apart.

Bake 12 to 13 minutes until cookies are just set (tops look mostly dry, edges feel structured but may still indent when pressed toward center of cookie, almost look under done).

Immediately remove from cookie sheet and transfer cookies to cooling rack.
